Be different.

Check out our story if you want to know how we started. However, in a nutshell, we started out this journey with a singular mission: Be different. Although we are fans of many whiskeys around the world, we just felt we could do something different and perform the science of achieving the flavor and mellowing process of the whiskey in the distillation operation instead of relying solely on blending flavors created by storing whiskey in oak barrels. We set out to develop a full bodied flavor whiskey that was ultra-smooth which we believed were not essential to making a truly great, premium whiskey.

Charred Wood

Charring wood barrels affects the flavor and color of the spirit by exposing the wood sugars. The combination of time and barometric pressure forces the original clear spirit alcohol into the burned wood to absorb the phenolic compounds. This in turn affects the flavor of the new make spirit and it also acts as a mellowing filter helping to reduce sulphuric compounds. The color is a result of absorbing the charred wood.

We thought we could pursue an avenue which allowed us to create the prime attributes of whiskey, notably taste and smoothness before using the charred barrels to do it for us and create our own unique, premium whiskey. This revolutionary approach led us to develop a more labor intensive method of creating the smoothest, full-bodied flavor whiskey you have ever tried called Temper Distilling. This proprietary process eliminates the need to depend solely on the barrels to flavor, color and mellow the whiskey and instead creates a truly finished product in the still. The barrel aging does lend itself to developing even more subtle flavors from our three mashbills making even our award winning unaged, “clearic” style whiskey even more enjoyable in the finished aged product!
